No Recipe Tuesday

So tonight I realized that my list of recipes I make is limited. I grew up cooking and making things, but it was always recipes my mom had, and have in her cookbooks. And it was just a few basics. But now I am on my own. NOT GOOD!!!!!!

Isaiah ended up staying home tonight because there were really bad storms all around us when he would be in school. I was so excited and wanted to make something special for him but didn't want to make the same things I always make. I started looking in my all of 2 cookbooks and found nothing. Then I looked online. I couldn't find anything that would work with what we have and we would like. I fell apart. All I wanted was to make a nice dinner for my husband, but yeah that didn't work.

This was after having a rough day at school and I was exhausted. Then as I'm trying to figure something out, I resprain my ankle. Its all swollen and not pretty. And after falling apart and crying my eyes out, my dear amazing husband offered to go get McDonald's.

Honestly, I feel like a failure as a wife. My mom would always have something awesome cooked for my dad when he got home. And she always had lots of delicious recipes. I honestly feel like I'm not a good wife and that's a struggle.

I also have a question for you, my few readers. Could anyone give me a recipe that is easy and they love?

  1. First of all - hit the library. Its the cheapest way to get lots of recipe books and ideas that you can copy out if you like without spending all the money on the books. I will be sure to send you some recipes you and Isaiah will both like. :)

  2. I just did a whole grain Hamburger Helper (but it was for Chicken) tonight. Met with good results. Another easy one that Richard absolutely loves is to mix Parmasean Cheese (from the can), Miracle Whip and Oregano (or any Italian Seasoning) coat over chicken (use skinless breasts) and bake 350 for 30 min or so

  3. mix in a bowl, vigo italian bread crumbs and a little flour mixed in a bowl with extra parm cheese
    in a separate bowl, mix three eggs, salt and pepper.

    cut boneless skinless chicken breasts in strips, dip them in the egg, then in the vigo crumbs, and fry until golden brown/chicken is thoroughly cooked.

    dipping sauce : hidden valley ranch + hot sauce

    i prepare this meal with macaroni and cheese and a veggie.

    there are so many more i could give you. not enough space or time at the very moment.

    BUT also, get a copy of the Brides Cookbook. ask one of the deacons at church if you can get a copy, its a cookbook that our church put out years ago. i have one but the binding came out of so its a mess.
    its neat. a bunch of different sisters put recipes together and they made a small cookbook out of it.

  4. Mini Meatloaves -

    1 egg
    3/4 c. milk
    1 c. shredded cheddar
    1/2 c. quick cooking oats
    1 tsp. salt
    1 lb. ground beef

    combine above ingredients (beef last) mix well, and form into eight mini loaves. place in greased 9x13 dish.

    Topping -

    2/3 c. ketchup
    1/4 c. brown sugar
    1 1/2 tsp. mustard

    mix together and spread over each loaf.

    Bake, uncovered @350 for 45 mins.

    Probably not the healthiest, but super quick to throw together, and tastes great, even if you arent a fan of meatloaf.

  5. Sweet & Sour Chicken

    4-6 Chicken breasts (boneless + skinless) and cut in half

    1- 8oz. bottle Catalina salad dressing
    1- 8oz jar Apricot preserves
    1- envelope Lipton Onion Soup Mix

    place chicken in long casserole dish
    Mix soup, dressing, and preserves
    Pour over chicken evenly
    Cover and bake at 350 for 1 and 1/2 hours
    serve over cooked rice.

    Again, not the healthiest I suppose, but really easy to throw together.

  6. Have you ever made chicken & dumplings? They're time-consuming, but not difficult. I'll email you the recipe if you'd like.

    Also, taco soup is the best, and easiest! It's all canned ingredients (except ground beef), thrown in the crockpot, served with corn chips, cheese and sour cream. Yum!

    I need to start putting together a cookbook of my own...since my dad can't have any dairy, we don't have a variety of dinners. Fortunately, dairy is not a problem for Hayden, but I'll have to get used to cooking with milk and cheese!

  7. I have a few if you'd like me to email them to you. I feel the same way you do @ times -- failure as a wife & mother. We should share recipes b/c I don't like preparing the same meals over & over either.
